Red Thai Prawn Curry –   Detox week 1

I am having a detox week this week.

I feel like a really good cleanse as I over did it at the weekend.

I actually made a red thai curry at the weekend with all the bells and whistles on but decided to re-create it detox stylee! And I am so pleased with the result, this is so delicious and really quick to make! It takes about 10 minutes!

For 2 people

Ingredients

The sauce

2 (jarred) red peppers ( make sure there is no added sugar )

2 cloves of garlic

1 tablespoon tomato puree

1 handful fresh coriander leaves

1 chilli ( this is medium hot, adjust to your taste )

4 tinned/bottled anchovies ( if on week 1 not in oil )

1 inch of ginger

200g prawns

The rice

1 grated cauliflower

Method

  1. Place all sauce ingredients in a blender expect the prawns and blitz for a few seconds.
  2. Heat up the sauce in a saucepan for 3 minutes on a low heat and add cooked prawns once heated.
  3. Meanwhile dry fry grated cauliflower in a frying pan for 4 minutes. Keep stiring.
  4. Serve cauliflower rice on a plate with the sauce on top and add more coriander leaves for garnish.

If you are in week 5 or maintenance you could add coconut milk for a thicker sauce.
