Coconut Salmon recipe
Ingredients: 4 Salmon Fillets, skinned
For the marinade: 2 tbsp coconut milk; 2 green chillies, deseeded and finely diced; 2 tbsp chopped coriander leaves; 2 garlic cloves; 2tsp finely grated fresh root ginger; juice of 1 lemon with 70ml hot water
To garnish: Lemon Wedges, coriander leaves and pomegranate.
Method: Place all the marinade ingredients in a blender and blend till smooth. Add all the marinade to the salmon and steam or grill for 15-20 minutes, until it flakes. Serve garnished with lemon and coriander leaves.
