Ingredients

1 large (or 2 small) apples (e.g Braeburn)
1tsp lemon juice
1tsp honey
1 large, ripe banana, mashed
8oz / 225g / 1 cup oats
1 tsp mixed spice
2oz / 55g / ¼ cup sultanas

Preparation method

1 Core, peel and chop the apples. Place in a saucepan with the lemon juice and honey and cook over a low heat until soft (5-6 minutes). Allow to cool, then mash.
2 Put all of the ingredients in a bowl and mix thoroughly.
3 Preheat the oven to 180°C / 350°F / gas mark 4 and line a baking sheet with baking parchment.
4 Drop the mixture on to the parchment in cookie-sized portions; bake for 15-20 minutes.

This is a flexible recipe, so if you’d rather use a different fruit, such as chopped apricots, or you’d like to add some chopped nuts, go ahead. You could also use nutmeg or ginger (for example) instead of mixed spice.
