Ingredients
1 cup red lentils, rinsed
2 cups water
2 cloves garlic
4 tbsp. tahini
1 tsp. salt
1 tsp. lemon zest
1 tbsp. freshly squeezed lemon juice
¼ tsp. paprika
1 tsp. coriander, ground
1 ½ tbsp. apple cider vinegar
Preparation method
1. Place rinsed lentils and water into a large sauce pan. Bring to the boil and then reduce heat to low. Cover the sauce pan and let cook until all the water is absorbed and the lentils are soft.
2. Remove from the heat and allow to cool for 30 minutes.
3. Using a food processor, combine the cooked lentils, garlic, tahini, salt, coriander, lemon zest, paprika, apple cider vinegar and lemon juice. Puree until smooth.
Nice to Know: This recipe is generally thinner than traditional hummus. If you prefer a thicker version, refrigerate it for a thicker consistency.
