Serves 4 – Use the slices of my nut bread you made on Monday

Ingredients

200g. goats cheese
150g. rocket, spinach and lettuce
150g. walnuts
1 handful flat leaved parsley
1 handful basil
1 clove garlic , crushed
3 tbsp apple cider vinegar
4 tbsp walnut oil

Preparation method

1. Grill one side of your toast and then place goats cheese on the other side and grill until melted
2. Blend the oil, vinegar and garlic for the dressing.
3. Combine the greens, basil and parsley on your plate with the cheese on toast and drizzle over the dressing.

Goats cheese has far fewer calories than cows cheese. Goats’ cheese contains more vitamin D and vitamin K, thiamine, and niacin. It’s also a good source of riboflavin (a B vitamin) and phosphorus.
