Serves 4

Ingredients

3 tbsps olive oil
2 red onions, thinly sliced
2 cloves garlic, crushed
2 courgettes, sliced
2 yellow summer squash (or other summer squash), sliced
12oz ripe tomatoes, sliced and placed on kitchen paper to absorb juices
4oz grated parmesan
4 oz grated mozzarella
large sprig of fresh basil, chopped
salt and freshly ground black pepper

Preparation method

1 Heat 1 tbsp olive oil in a frying pan and sauté the onions, stirring frequently, for around 10 mins. Add the garlic for the last couple of minutes.
2 Lightly oil an ovenproof dish and spread the onions and garlic evenly in the bottom. Preheat the oven to 180ºC.
3 Put 1tbsp oil in a bowl; add the sliced courgettes and squash and turn in the oil until coated.
4 Mix the parmesan, mozzarella and basil together and set half aside. Layer the sliced vegetables over the onions in the dish, sprinkling each layer with the cheese mix. Top the final layer with the reserved cheese and season with salt and pepper.
5 Bake for around an hour until well-browned. Allow to stand for 15 mins before serving.

This is delicious on its own or with a crunchy salad. Alternatively, serve it with your favourite fish.
