Ingredients

1 tbsp vegetable oil
1 onion, finely chopped
1 clove garlic, minced or crushed
½ tbsp grated fresh root ginger
¼ red chilli, minced
1 tsp finely chopped lemongrass
350ml water
165ml can coconut milk
1 tbsp fish sauce
250g uncooked prawns
1 small pak choi, finely shredded
Juice of ½ lime
Salt and freshly ground black pepper
Fresh coriander, chopped

Preparation method

1 Heat the oil in a large saucepan over a medium heat then add the onion, garlic, ginger, chilli, and lemongrass and saute for 3-4 minutes.
2 Add in the water, coconut milk and fish sauce, and bring to the boil.
3 Reduce the heat and add the prawns and the pak choi; simmer gently for 2-3 minutes, until the prawns are pink and cooked through.
4 Stir in the lime juice and season to taste with salt and freshly ground black pepper. Serve garnished with chopped fresh coriander
