{"id":1501,"date":"2015-01-31T13:34:12","date_gmt":"2015-01-31T13:34:12","guid":{"rendered":"http:\/\/www.thebodyrescueplan.com\/members\/?p=1501"},"modified":"2017-09-11T12:37:51","modified_gmt":"2017-09-11T11:37:51","slug":"sweet-potato-lentil-and-coconut-curry","status":"publish","type":"post","link":"https:\/\/thebodyrescueplan.com\/members\/sweet-potato-lentil-and-coconut-curry\/","title":{"rendered":"Sweet potato lentil and coconut curry"},"content":{"rendered":"<h1 class=\"green-header\">Ingredients<\/h1>\n<p>2 large sweet potatoes (mine weighed 1.5kg)<br \/>\n2 cups of black olives<br \/>\n1\u00bd cups of lentils (500g)<br \/>\n2 cans of coconut milk<br \/>\n2 cans of tinned tomatoes<br \/>\na handful of fresh coriander leaves<br \/>\n1 tablespoon of turmeric<br \/>\n1 tablespoon of cumin<br \/>\n1 tablespoon of ground ginger<br \/>\nsalt and pepper<br \/>\n1 lemon<\/p>\n<h1 class=\"green-header\">Preparation method<\/h1>\n<p>1. Pre-heat the oven to 180C then start by cutting the sweet potatoes into small bite-sized cubes and finely chop the coriander.<\/p>\n<p>2. Place the coconut milk, tomatoes, turmeric, cumin and ground ginger in a large saucepan, or even better a Le Creuset style cast iron casserole dish, allow these to heat into they begin bubbling. At this point add the sweet potato cubes, lentils, olives and coriander plus salt and pepper.<\/p>\n<p>3. Once everything is mixed simply place the lid on the pot and place it in the oven to cook for about an hour, until the potatoes are soft and everything tastes delicious! At this point squeeze the lemon juice into the pot and then serve.<\/p>\n<p>4.
